We shouldn’t forget about people with some chronic illnesses such as diabetes or celiac disease. They always have limits with food. Diabetics cannot eat sugared food, so sweets and polvorones are forbidden for them. On the other hand, celiac people don’t tolerate gluten, a substance found in wheat-flour.

However, our desire is everyone could eat no matter their diseases. That’s why we thought about making different polvorones, some without sugar, and others made not with wheat-flour but with corn-flour. So now, in spite of tasting different, celiac and diabetics, both can enjoy the wonderful products we offer. 

To distinguish easily these types of polvorones from others, we have named them depending on the three first letters of the disease. For celiac, the name of their polvorones begin with CEL- (CELIA, CELESTINO, CELTA), and for diabetics begin with DIA- (DIANA, DIONISIO, DIANDRO).

Achieving these polvorones changing the typical ingredients and trying to keep good taste at the same time suppose a great difficulty, but we can assure you will feel the taste of chocolate and almonds, coffee and hazelnuts, blackberry and pine nuts, etc... MMMMM!!!

As we said, although the polvorón has always been typical during Christmas, we are trying to make it accessible for the whole year. That’s the reason why we have a great permanent edition divided in three kinds: classical and gourmet.

Due to the idea of our business to be close to the customers, the “classical edition” consists of a set of polvorones already known by people because of their taste, but named, and this is true, with the names of our grandparents, because they are the best representantives of tradition. Here we have a list with some of them:



On the other hand, we have the “gourmet edition”. This one is a little bit different because the ingredients are less common and these are mixed in order to achieve new and fantastic tastes. They are sold during all the year.
The name of each polvorón depends on the receipt and the ingredients. Some examples are in the next table:

Polvorones is our product or at least is what our campaign wants to provoke in consumer mind. For that reason La Polvera was born.




At first, you can misunderstand the name La Polvera and think about compacts, the object that women use to make themselves up. But then when people believe they have met the product, the consumer discovers that we are talking about polvorones and shortbreads, a typical Spanish product that has a long tradition but for unknown reasons is overall consumed in Christmas time and difficult to find and buy during the rest of the year. 


We want to eliminate this seasonality and make of polvorones a product consumed all over the year. This way, people who really love tasting these sweets (as we do!) and have to wait eleven months to consume them again, are able now to find them whenever as other sweets!


Although we know that our country has an extremely good image concerning gastronomy thanks to plates like paella, cocido, wines, ham and cheese or calamares, we don’t have such a tipical product when we talk about our bakery history.




We want to show that we have a good and rich quality producing this baked product and make of it a legend.
This way, people visiting Madrid, will not only taste cocido madrileño but also polvorones in La Polvera.

Nice to meet you!


We are La Polvera, a new confectioner's in the centre of Madrid.


We are here to show you our fantastic products. Let's start! ;)


Do you know what "polvorones" are?









A "polvorón" (as in Spain is written) is a type of heavy, soft and very crumbly shortbread. They are popular specially Spain and are just eaten during Christmas. Why just then? There is no justification!

So one day our team started to think...
Almost every country has one or several national or typical products...
Look France! Mmmm... macarons!
Wait! United Kingdom has cookies!
And what to say about cupcakes in the United States!



But, what we have in Spain? ...

It was born

We are specialist in polvorones and mantecados and we want to make of them an all-year gourmet Spanish product.
Our creations are made of flour, sugar, milk, nuts and lard or butter. The only difference between polvorones and mantecados is the quantity of lard.

Did you know we have created more than 15 kind of polvorones?
